Indian Food Doesn't Have to Boil the Paint off a Pillar!

It is a myth that Indian food, especially curry, is as a rule so strong that it will burn the paint off a wooden pillar. Traditional Indian food is very spicy, yes. But it is definitely not all unbearably hot.

Today we are going to take a close look at curried venison to utilise our game sitting idly in the freezer. However, let's take a close look at what we have to have in our shopping basket:


1½ cup chopped onions
3 chopped celery stalks
2 minced apples
¼ cup salad oil
2 teaspoons curry powder
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon ginger
¼ teaspoon Tabasco
½ teaspoon Worcestershire sauce
2 cups stock
¼ cup flour
1,5 kg cooked kudu, cubed
Cream or milk
1 egg yolk, beaten
3 cups boiled rice

Saute onions, celery and apples in oil until slightly brown. Stir in curry powder and simmer 5 minutes. Add remaining seasonings and stock and cook 20 minutes. Stir in flour mixed with water and cook 5 minutes, stirring until thickened.

Remove from heat and allow to stand one hour. Reheat and add cooked meat, cream or milk, and egg yolk just before serving. Heat to boiling point, stirring constantly. Serve over rice.
